Pear Gingerbread Pudding

With the holiday season approaching gingerbread is sure to be on your menu. When I have unexpected company this delicious and easy recipe is my favourite to make.

You top this wonderful ginger cinnamon-scented cake with a generous dollop of fresh whipped cream or even a small scoop of vanilla ice cream to make it an elegant dinner dessert.

Ingredients

1 (14oz) can of sliced pears or 4 fresh pears, peeled and sliced

2 tbsp liquid honey

1/2 cup butter

1/3 cup sugar

1/4 cup fancy molasses

1 egg

3/4 cup flour

1 tsp ground ginger

1 tsp cinnamon

1/4 tsp ground cloves

1/2 tsp baking soda

2/3 cup hot water

Method

Cube up the pears and place in a 8 inch greased baking dish. Drizzle with honey. Set aside. In a large bowl, beat butter with sugar until fluffy. Beat in molasses and egg until combined. In a separate bowl, combine flour, ginger, cinnamon, cloves and baking soda. Stir into molasses mixture, mixing alternately with hot water, making three additions of dry ingredients and 2 of hot water. Pour over pears. Bake in center of 350 degrees oven for about 30 minutes or until cake tester inserted in centre comes out clean. Serve warm with whipped cream or ice cream.
