Tropical Chicken Skewers

These easy to make skewers are just the perfect portion size for lunch. You can add different flavored maple syrup and veggies to create your own skewer.

 

For the skewers:

2 large boneless chicken breasts, chunked

1/2 zucchini, sliced thickly and halved

3/4 cup of pineapple, chopped in large chunks

1 tbsp maple syrup

1 tsp Club House maple bacon seasoning

1 tsp coconut oil

 

Thread skewer ingredients, alternating between pineapple, zucchini, and chicken. Brush the maple syrup over skewers. Sprinkle the seasoning over the skewers, and let sit for 10 minutes or longer. Add 1 tsp coconut oil in your pan and grill on med-low heat until chicken in cooked through. Great with quinoa, rice, or alone!

 

Gluten free brownies

 

These gluten-free treats are so delicious. My eight year old daughter simply loves them. They are rich in chocolate flavour, moist and fudgy. You wont make any other brownies!


1 medium ripe avocado, mashed
¼ cup coconut oil, melted
1 large egg, lightly beaten
½ cup pure maple syrup
1 1/2  tsp. pure vanilla extract
¾ cup unsweetened cocoa powder

¼ cup gluten free flour
1/2  cup dark chocolate chips

Preparation:
1. Preheat oven to 350° F.
Lightly grease a small square-baking dish. These brownies don't rise so you need a small glass dish.
3. Combine the avocado, coconut oil, egg, maple syrup, and vanilla extract in a medium bowl.
4.  In a separate bowl combine cocoa powder, and flour and chocolate.  Mix well.
5. Add cocoa powder mixture to avocado mixture; mix until blended.
7. Pour batter into prepared pan; spread to make even.
8. Bake for about 30-35 minutes, or until toothpick inserted in center comes out
