Chicken quinoa casserole

A delicious casserole that is a nice comfort food! From scratch it is quick and easy to make and it's loaded with good for you ingredients

1 cup quinoa

one head of broccoli cut into florettes

2 tablespoons butter

two boneless skinless chicken breast cubed

2 tablespoons butter

2 tablespoons of flour

2 cups of 2% milk

1 1/2 cups of shredded cheddar cheese

1/2 cup Greek yogurt

Preheat oven to 350°. In a medium saucepan add 2 cups of water and cook quinoa. Within the last five minutes add the broccoli on the top of the quinoa just to steam lightly. Heat 1 tablespoon of butter in large skillet. Add chicken breast with salt and pepper to taste. Cook. 

Meanwhile melt 2 tablespoons of butter in skillet over medium heat. Whisk in flour about one minute. Whisk in the milk slowly and cook whisking constantly until your mixture is slightly second. Stir in quinoa, broccoli, chicken, cheese and yogurt. Season to taste with salt and pepper.  Spread the mixture into the baking dish. Place into oven and bake until cheese and mixture is nice and hot about 15 minutes.
