With a hint of marmalade and a few olives you’ll get a Spanish flair to this burger. You can certainly substitute the ground beef with lean ground chicken or turkey. Great served with a green salad.

Ingredients:

1 pound lean ground beef

1 egg

1 green onion, sliced

1/4 cup finely chopped pimento stuffed olives

4 tbsp orange marmalade

2 tsp paprika

1 clove garlic, minced

Salt and pepper to taste

Topping:

1/4 cup light Miracle whip

2 tsp orange marmalade

2 tsp chopped fresh cilantro (in the produce section of your supermarket)

Method:

In a large bowl, beat the egg. Add the onions, olives, marmalade, paprika, garlic, salt and pepper. Add ground beef. Mix well. Shape into patties about 3/4 inch thick. Grill on the barbeque on low to medium heat. Close lid to cook more quickly and evenly. For the topping stir together in a small bowl the miracle whip, marmalade and cilantro. When the burgers are done, dollop with a spoonful of this mayo mixture. Top with a few thin slices of red onion, lettuce and even sliced peppers if you like.
