Cookies are good to have all year round, and these are just the perfect ones to have in your freezer to serve the unexpected company. My sister friend Paulette makes these every year for me at Christmas. It’s a recipe from her Grandmother who always made them for her grandchildren. Paulette has taken over the tradition, and now makes them for her family each Christams. Most readers would know these cookies as “Mice.
INGREDIENTS:
2/3 cup peanut butter
1 cup icing sugar
4 tbsp melted butter
1 1/2 cups rice krispies
1 1/4 cups chopped pecans
1 cup coconut
1 (or more?) cups chocolate chips
METHOD:
In a bowl, mix together all the ingredients, except for the chocolate chips. Form into small shaped logs. Refridgerate for at least 1 hour before dipping in chocolate. Meanwhile, In a small pot, place the chocolate chips. Then take a cup of water and add to a medium size frying pan. Place on medium heat until it comes to a boil. Place the small pot filled with chocolate chips in the frying pan and simmer until the chocolate melts, stirring frequently. Then take the formed logs out of the refrigerator. Take sturdy toothpicks and stick into each log. Then dip the logs into the chocolate that is still simmering on the stove. Place the logs on a baking sheet covered with wax paper. Remove the toothpicks and take a spoon with chocolate and cover over the holes that the toothpicks made in the logs. Place in the refrigerator to set the chocolate. Then freeze or just eat them!
