Table Talk -
I was starting out making a blueberry grunt, but this recipe is more like a buckle, meaning it's made from a cake batter and finished with a sugar topping. Expect requests for seconds.
Ingredients
Topping
1/2 packed brown sugar
1/3 cup all-purpose flour
1 tsp ground cinnamon
3 lbs cold butter, cut into bits
Cake
2 cups white, yellow or lemon cake mix (half of standard box of cake mix)
2 eggs beaten
1/2 cup milk
1 1/2 fresh or frozen blueberries
cups freshly whipped cream or vanilla ice cream
Directions
Topping: In a bowl, combine brown sugar, flour and cinnamon. Mix to blend. Using two forks or your fingers cut in butter until crumbly. Set aside
Cake: In a bowl, combine cake mix, eggs and milk. Beat with a wooden spoon just until blended. Fold in blueberries. Drop mixture into prepared pan by tablespoons, evenly over cake.
Bake at 375 degrees until a tester in the center comes out clean, about 40 minutes.
