Table talk - Lentil and orange salad

After having turkey and goodies all throughout the holidays, treat yourself to a healthy lentil salad.

Lentils come in several varieties: red, brown and green. Lentils are quick cooking, around 20 minutes. You can prepare the salad while the lentils are cooking. You can even purchase canned lentils as well.


1 tbsp fresh lemon juice

1 tbsp olive oil

2 cloves minced garlic

1/2 tsp cumin

2 cups cooked lentils

2 navel oranges, peeled and sectioned

1 small red onion, diced

1/4 cup sliced pimiento-stuffed green olives

2 tbsp chopped fresh parsley


Mix the lemon juice, oil, garlic salt and cloves in a bowl. Gently stir in the lentils, Orange sections, onions, olives and parsley. Serve on lettuce leaves or on a bed of spinach.
