Cod fish casserole

Last weekend we had our annual trip down the southwest coast to West Point for the Cod Food Fishery.

We always take a day trip to La Poile. After going to the local store (for our Ice Cream Treat) I had a great conversation about food and recipes with Rita Bond who owns the store. Rita was so kind as to give me her favourite cod recipe to share with the readers. It’s delicious. Oh, the photo was taken down La Poile as well!

Ingredients

1 pound cod fillets, thawed and patted dry

1/4 cup butter

1 small onion, diced

1 green pepper, diced

14oz can diced tomatoes, undrained

3 tbsp flour

Salt and pepper to taste

2 cups grated mozzarella cheese

Method

In a medium size saucepan and butter and melt over medium heat. Add onion ,green pepper and sauté until tender. Add the canned tomatoes. Blend in the flour, salt and pepper. Stir constantly for about 5 minutes. In a greased casserole dish arrange your cod fillets.. Pour the tomato sauce over the fish fillets. Top with Mozzarella cheese and bake at 350 degrees for about 30-35 minutes, uncovered. Garnish with parsley.
