Ingredients
4 serving size pieces
cod
1 tbsp olive oil
1 clove garlic, minced
1 cup sliced fresh
mushrooms
1 cup chopped onion
2 large tomatoes, diced
1 tsp dried basil
1 tsp dried oregano
1 tsp chili powder
4 tbsp fresh grated
parmesan cheese
Method
In a large non stick skillet, add olive oil. Saute garlic, mushrooms and onions until soft. Add the diced tomatoes, basil, orengao and chili powder. Simmer for about 10 minutes. Arrange fish in a glass baking dish large enough for a single layer of cod. Pour sauce over top. Bake at 425 degrees for 15-20 minutes or until fish flakes easy with a fork. Serve each piece with a sprinkle of Parmesan cheese.
